I could live off only eating pickled vegetables. Really. But I’d never actually tried to pickle my own veggies. Well, I gave it a whirl today. PLUS, that’s my home grown cucumber pickling away in that jar!
My crop didn’t support 7 continental cucumbers however, so I used half a Continental cucumber. That works out to be about 1/14 of each recipe ingredient. I’m no mathematician but I used about 150 mls of vinegar and the same of sugar (I used brown sugar- the recipe calls for white, but apparently it’s the same thing anyway!).
I just winged the spices. Finger crossed!
