    I really like Apple Spinach Lasagna

    here is the recipie, please try it.

    1 pkg. (8 oz.) lasagna noodles.

    2 cans cream of mushroom soup

    2 pkg. (12 oz.) chopped, frozen spinach

    4 large apples, peeled, cored, grated

    Nutmeg to taste

    12 oz. Swiss cheese, grated

    Fresh sliced mushrooms ,if desired

    Cook lasagna and spinach as directed. Drain well. Layer in buttered baking dish: lasagna, soup, spinach, apples and cheese. Repeat the layers. End with cheese. Bake for 30 minutes at 375 degrees. Recipe didn’t say where to add the nutmeg.

    To be fair the book does have some good sounding recipes. This is one of them:

    Pumpkin Shell Casserole

    1 small pumpkin, 7″ in diameter

    2 cups apples, peeled, chopped coarsely

    1 cup raisins

    1 cup pecans, chopped

    1/4 cup brown sugar

    1 teaspoons lemon juice

    1/2 teaspoon cinnamon

    3 tablespoons margarine, melted

    Wash and dry pumpkin, slice off top for lid. Scrape out seeds. Combine all ingredients, mix well, and fill pumpkin. Cover with “lid”, place on cookie sheet. Bake at 350 degrees until apples and pumpkin pulp are tender. Begin checking doneness after 1 hour. It may take up to 45 minutes longer. For faster baking, cover pumpkin with aluminum foil. This casserole may be served hot or cold. Serve from shell, spooning some pumpkin with each portion. Variation: in addition to above fruit, prunes, apricots or pineapple are excellent.

    My all-time favourite recipe!

    Scrumptious Apple-Pecan Cheesecake

    Secret ingredients:
    1 cup HONEY MAID Graham Cracker Crumbs
    3/4 cup finely chopped PLANTERS Pecans, divided
    3 tablespoons sugar
    1 teaspoon ground cinnamon, divided
    1/4 cup butter or margarine, melted
    2 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
    1/2 cup sugar
    1/2 teaspoon vanilla
    2 eggs
    1/3 cup sugar
    4 cups thin peeled apple slices

    Way to success:
    1. Preheat oven to 325 degrees F if using a silver 9-inch springform pan (or to 300 degrees F if using a dark nonstick 9-inch springform pan). Mix crumbs, 1/2 cup of the pecans, 3 Tbsp. sugar, 1/2 tsp. of the cinnamon and butter; press firmly onto bottom of pan. Bake 10 minutes.

    2. Beat cream cheese, 1/2 cup sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour over crust. Mix 1/3 cup sugar and remaining 1/2 tsp. cinnamon in large bowl. Add apples; toss to coat. Spoon over cream cheese layer; sprinkle with remaining 1/4 cup pecans.

    3. Bake 1 hour and 10 minutes to 1 hour and 15 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Store leftover cheesecake in refrigerator.

    I absolutely love baked apples and pears with butter and brown sugar.

    Mmm!!!

    I also love juicing fresh apples with other fruits for a yummy little morning cocktail (minus the alcohol, of course.)

    Toffee Apple Dip:

    8oz cream cheese softened
    1 cup Brown Sugar
    1/2 cup powdered sugar
    1/2 tsp vanilla
    1/2 cup Skors toffee chips

    Mix all together and refrigerate 24 hours.

    Slice Granny Smith apples and soak each piece in pineapple for a few seconds.(keeps them from turning brown) serve with the dip and ENJOY!

    I LOVE apples. please enter me. you might think this is gross but I use green apples when I make a crab salad. if chopped really thinly and small, a green semi sour apple will the crab that extra tang. I don’t follow recipes, I’m Russian, that’s my excuse :)

    My favourite apple recipe is a good old fashioned Apple Crumble – if I ever need to cheer up my boyfriend, this is the recipe I use (and it doesn’t hurt that I get have some too!)

    The crumble is rich and buttery and the cinnamon really gives it a nice spicy flavour and cuts through the sweetness.
